Caramelised Onion & Apple Chutney

Makes: 1L Approx Time: 1 hr 20mins

 

Ingredients:

 

  • 1 tbs. rapeseed oil
  • 400g red onions - peeled and finely sliced
  • 100g white onions - peeled and finely sliced
  • 500g apples - peeled,cored and sliced
  • 100g granulated sugar
  • 200g demerara sugar
  • 300ml red wine vinegar
  • 1 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. ground allspice
  • Salt to taste

 

Method:

  1. Heat the rapeseed oil in a pan and then gently cook the onions over a low heat until soft and semitransparent,stirring occasionally.
  2. Once the onions are cooked, add the remaining ingredients to the pan and bring the mixture to the boil. Reduce the heat, cover and simmer for 1 hour stirring often.
  3. To sterilise your jars, heat the oven to 130oC/GM 1 and arrange the jars on the shelves (taking care not to place them too close to each other) and heat for a minimum of 20 minutes.
  4. Carefully remove the jars from the oven and immediately spoon the cooked chutney into the hot jars and seal. Serve once cooled and store in a cool, dry place for up to 4 weeks.
