Flavoursome Gammon with Cider #dinnermadelocal
1. Place the gammon and other gammon ingredients in a pan, the liquid should cover the meat. Bring to the boil, then simmer gently for 1 1/4¼hours turning the gammon occasionally.
2. Preheat the oven to 200°C/GM 6. Remove the gammon from its cooking stock and transfer it to a small roasting tin. Cut the rind from the gammon and score the fat into diamonds with a sharp knife.
3. For the glaze, put a ladleful of the cooking stock into a clean pan. Add the sugar and chilli powder and cook until a glaze-like consistency. Pour this over the gammon and roast for 15 minutes, until browned and caramelised.
4. For the sauce, boil the remaining cooking stock in a pan over a high heat until it has reduced to about 500ml (approx. 10 minutes). Then, strain the liquid into a clean pan, season to taste and bring to a simmer. Stir cornflour paste into the sauce to thicken, stirring continuously. Serve immediately.
. 1.2kg boneless gammon joint
. 500ml dry cider
. 1 litre apple juice
. 2 cooking apples, cored & cut into chunks
. 2 x 8cm pieces cinnamon stick
. 3 cloves (whole)
. 1 tsp. freshly grated nutmeg
. 2 bay leaves
. 5 black peppercorns
. 2 pieces of star anise
For the glaze & sauce
. 1 tbs. demerara sugar, or to taste
. 1/4 tsp. chilli powder
. 1 heaped tbs. cornflour
